Fried Chicken at Home with Chef Amar Santana

Amar Santana, chef and co-owner of VACA and The Hall Global Eatery  at South Coast Plaza, makes a mean and mouthwatering Fried Chicken. Our favorite Top Chef  alumnus (and competition finalist) has generously shared his secret recipe so you, too, can make it at home. The ingredients are listed below.

Ingredients:

Chicken
1 Whole Chicken (organic air chilled)
4 cups Buttermilk
2 tbsp Garlic Powder
2 tbsp Ground Black Pepper
1 cup Lime Juice
4 tbsp Salt
1 tbsp Paprika

Seasoned Flour
4 cups AP Flour
1 cup Cornstarch
2 tbsp Salt
1 tbsp Ground Black Pepper

Cole Slaw
1/2 Red Cabbage
1/2 Green Cabbage
1/4 Apple Cider Vinegar
1/2 cup Sugar
1 Green Apple
1 tbsp Salt
2 tbsp Mayonnaise
